A spicy, creamy, and protein-rich paneer dish cooked with traditional Kolhapuri masalas. Perfect for lunch or dinner — full of flavor, quick and easy to make!

Ingredients :
• Grated Paneer (fresh)
• Oil
• Mustard Seeds (मोहरी)
• Cumin Seeds (जिरे)
• Poppy Seeds (खसखस)
• Ginger-Garlic Paste (आलं-लसूण पेस्ट)
• Cloves (लवंग), Black Pepper (मिरे), Star Anise / Ramphool (रामफूल), Stone Flower / Dagad Phool (दगडफूल)
• Onion (कांदा)
• Tomato (टोमॅटो)
• Capsicum / Dice / any optional veggies (ढोबळी मिरची)
• Melon Seeds / Magaz (मगज बी) — optional for texture
• Kolhapuri Masala
• Kolhapuri Red Chilli / Black Masala (कोल्हापुरी लाल तिखट / काळा मसाला)
• Turmeric (हळद)
• Coriander Powder (धनापुड)
• Salt (मीठ)
• Fresh Coriander (कोथिंबीर) for garnish

Step by step instruction :
1. Heat oil in a pan. Add mustard and cumin seeds. Add poppy seeds, ginger-garlic paste, cloves, pepper, star-anise & stone-flower — sauté.
2. Add chopped onion, tomato and capsicum — cook till soft.
3. Add melon-seed paste (optional), turmeric, Kolhapuri masala, red-chilli/black masala, coriander powder, salt — mix well.
4. Add a little water and bring to a boil.
5. Add grated paneer, mix thoroughly, simmer 2–3 min.
6. Garnish with fresh coriander and serve hot.
