Soya Bright Recipes

1. Heat oil in a pan. Add mustard and cumin seeds. Add poppy seeds, ginger-garlic paste, cloves, pepper, star-anise & stone-flower — sauté.  
2. Add chopped onion, tomato and capsicum — cook till soft.  
3. Add melon-seed paste (optional), turmeric, Kolhapuri masala, red-chilli/black masala, coriander powder, salt — mix well.  
4. Add a little water and bring to a boil.  
5. Add grated paneer, mix thoroughly, simmer 2–3 min.  
6. Garnish with fresh coriander and serve hot.

Paneer / Tofu Ghotala

1.	Heat oil in a pan and add cumin seeds.
2.	Add chopped onions and sauté until golden brown.
3.	Add ginger-garlic paste and cook until the raw smell disappears.
4.	Add tomato puree and cook for 2–3 minutes.
5.	Add the spices: turmeric, red chilli, coriander powder, and salt.
6.	Mix well and cook the masala until oil starts separating.
7.	Add water and let the gravy simmer.
8.	Add tofu/paneer cubes and gently mix.
9.	Add cream and kasuri methi. Cook for 3–4 min.
10.	Garnish with coriander and serve hot.

Tofu / Paneer Masala

A delicious, protein-rich tofu/paneer masala cooked in a creamy tomato-onion gravy with Indian spices. This recipe is perfect for lunch or dinner and pairs wonderfully with roti, rice, naan, or paratha. A healthier alternative to regular paneer, ideal for fitness-focused and plant-based diets.

1 Prepare the Tofu: Pat dry the tofu, cut into cubes, and marinate with soy sauce.
2 Coat & Fry: Coat tofu with corn starch and fry until crispy. Set aside.
3 Prepare the Sauce: Mix all sauce ingredients in a bowl and set aside.
4 Stir-Fry Vegetables: Heat oil in a pan, stir-fry onion, peppers, carrot, garlic, ginger, Sichuan peppercorns, and dry chillies.
5 Combine Everything: Add the fried tofu and pour in the prepared sauce. Stir well until thick and glossy.
6 Serve & Enjoy: Remove from heat and serve with rice or noodles.

Szechuan Soya Paneer/Toffu Stir-Fry
