Szechuan Soya Paneer/Toffu Stir-Fry

A spicy, flavorful Szechuan-style tofu dish packed with crispy tofu, bold aromatics, and a savory, glossy sauce. Perfect with rice or noodles!

Ingredients :

Tofu & Vegetables:

400g Firm Tofu (cut into 1-inch cubes)
½ Onion (diced)
1 Green Chilli Pepper (or bell pepper, diced)
1 Red Chilli Pepper (or bell pepper, diced)
1 Carrot (cut into 1cm cubes)
1 tbsp Garlic (minced)
½ tbsp Ginger (minced)
5-6 Dry Long Red Chillies (Sichuan or any mild/hot dry chilli)
1 tbsp Sichuan Peppercorns (roasted and crushed)
Vegetable Oil (for frying)
Tofu Seasoning & Coating:

1 tbsp Light Soy Sauce
8-10 tbsp Corn Starch (or potato starch)
Sauce:

2 tbsp Light Soy Sauce
½ tsp Dark Soy Sauce
1 tbsp Sugar
1 tbsp Chinese Black Rice Vinegar (or rice vinegar)
1 tsp Sesame Oil
1 tsp Corn Starch
2 tbsp Water

Step by step instruction :

1 Prepare the Tofu: Pat dry the tofu, cut into cubes, and marinate with soy sauce.
2 Coat & Fry: Coat tofu with corn starch and fry until crispy. Set aside.
3 Prepare the Sauce: Mix all sauce ingredients in a bowl and set aside.
4 Stir-Fry Vegetables: Heat oil in a pan, stir-fry onion, peppers, carrot, garlic, ginger, Sichuan peppercorns, and dry chillies.
5 Combine Everything: Add the fried tofu and pour in the prepared sauce. Stir well until thick and glossy.
6 Serve & Enjoy: Remove from heat and serve with rice or noodles.
