When soybeans are ground with water and strained to make soy milk, a soft white pulp is left behind. That pulp is okara. For centuries it has been cooked into dishes in Japan, China and Korea. Dried and finely ground, it becomes okara powder: a mild, high-fibre, high-protein flour that blends easily into everyday Indian food.

- Oats and porridge: mix in a spoonful while cooking.
- Curd and raita: stir into curd with a pinch of salt and roasted jeera.
- Cutlets and tikkis: use it to bind potato or vegetable mixtures instead of breadcrumbs.
- Gravies and dals: a spoonful thickens curries and dals and adds body.
- Baking: replace up to 20% of the flour in muffins, pancakes, cookies and bread.
- Upma and poha: sprinkle in near the end of cooking.
- Ladoos and energy bites: mix with dates, nuts and seeds.
#How much should you have?
Start with 1–2 tablespoons (about 15–30g) a day and increase gradually. Because it's very high in fibre, drink enough water, as a sudden jump in fibre can cause bloating. If you have a medical condition or a soy allergy, check with your doctor first.

Unopened, Soya Bright okara powder keeps for 8 months below 25°C. After opening, reseal the pouch tightly and keep it in a cool, dry place away from moisture.
