Soya paneer (tofu) is a high-moisture food, so how you store it makes a big difference to its taste, texture and safety. The right method depends on one thing: whether your soya paneer is shelf-stable or fresh (chilled). Check your pack first.
#Shelf-Stable or Fresh? Know Your Soya Paneer
- Shelf-stable soya paneer — like Soya Bright Soya Paneer — is processed and packed so that it keeps without refrigeration until it is opened. Soya Bright soya paneer lasts up to 11 months unopened when stored in a cool, dry place below 25°C, away from direct sunlight. No fridge needed until you open the pack.
- Fresh (chilled) soya paneer — sold in the refrigerated section — must be kept in the fridge at all times and usually lasts only a few days to a couple of weeks.
#Before You Open the Pack
- Shelf-stable packs: Store in a cool, dry cupboard below 25°C, away from sunlight and heat sources like the stove. There's no need to refrigerate them before opening.
- Fresh packs: Refrigerate straight away, even if the pack looks airtight, and keep them cold on the way home — especially in summer.
- Follow the date on your pack: Always use soya paneer by the use-by or best-before date printed on the pack.
#Refrigeration (After Opening)
Once any pack is opened — shelf-stable or fresh — soya paneer needs to be refrigerated.
- Use an Airtight Container: Store soya paneer in an airtight container to prevent moisture loss and absorption of odors from other foods.
- Keep it Moist: Submerge the paneer in fresh, clean drinking water in a covered container, or wrap it in a damp cloth, to stop it from drying out.
- Change the water daily: If you store it in water, replace the water every day to keep it tasting fresh.
- Temperature Control: Ensure your refrigerator is set to 4°C (40°F) or below.
- Consume Quickly: Use opened soya paneer within 3 to 5 days.
#Freezing
- Cut into Portions: Slice the paneer into smaller portions before freezing to make it easier to use later.
- Wrap Properly: Wrap each portion tightly in cling film or foil, then place it in a freezer-safe bag to prevent freezer burn.
- Label and Date: Label the bags with the date of freezing. Soya paneer can be frozen for up to 3 months.
- Expect a chewier texture: Freezing turns soya paneer slightly spongy and chewier. Many people love this — it soaks up marinades and gravies even better — so frozen soya paneer is perfect for curries, bhurji and stir-fries.
- Thawing: Thaw frozen soya paneer in the refrigerator overnight. For quicker thawing, place the sealed pack in cold water. Gently press out excess water before cooking.
#Marinating and Vacuum Sealing
- Marinating: You can marinate soya paneer in spices, curd or oil and keep it covered in the fridge, but marinating does not preserve it. Use marinated soya paneer within 1 to 2 days.
- Vacuum Sealing: Vacuum sealing removes air and helps prevent freezer burn, keeping frozen soya paneer in better condition for longer.
#How to Tell if Soya Paneer Has Gone Bad
Throw it away if you notice any of these signs:
- A sour or unpleasant smell
- A slimy surface that doesn't rinse off
- A yellowish or darker colour, or visible mould
- A bloated or swollen pack before opening
When in doubt, throw it out — soya paneer is inexpensive compared with the risk of an upset stomach.
#General Tips
- Avoid Repeated Thawing: Do not refreeze thawed paneer, as it affects both texture and quality.
- Use clean utensils: Always take soya paneer out with a clean spoon or tongs so you don't introduce bacteria into the container.
- Cooked dishes: Refrigerate cooked soya paneer dishes within 2 hours of cooking and finish them within 2 to 3 days.
